Pizza has been a culinary dish of Italy since the middle ages. It is the heart and soul of the Italian nation. Many have tried to master the art of pizza but the traditional methods of its dough preparation have been neglected over time, affecting the quality and taste of true Italian pizza.
Giovanni Pillitteri is one of the last remaining members of the Pillitteri family. He has had the pleasure of learning the traditional art of pizza craftsmanship taught by his grandfather Carmelo Pillitteri in Palermo, Sicily as a child in the late 1960’s. Giovanni has become the UK’s national pizza consultant, providing training and specialist knowledge to Hotels, Restaurants and Pizzeria’s across the UK and internationally.
